This original recipe is called "Baked mac and cheese" but Mini Me and I gave it a snazzier name. It is another recipe I have altered. I seem to alter them to be more casserole-like... Both kids love this one and it's pretty when fresh out of the oven.
Fancy Mac
2 c macaroni
1/2 stick butter
2 1/2 - 3 c shredded cheddar, divided
2 large eggs
1/2 c milk
paprika
1/2 package of frozen mixed veggies
cubed ham if desired
Preheat the oven to 350 degrees Fahrenheit. Grease an 8 inch square baking dish. Cook macaroni, drain well, return to pot. Boil frozen veggies, drain, and set aside. Add butter to macaroni and stir until melted. Add 2 1/2 cups of the shredded cheese. In a medium bowl, whisk the eggs with the milk. Add the milk mixture to the macaroni and stir until well combined, then stir in veggies and ham. Spoon all into greased pan. Sprinkle the remaining cheese on top and top with paprika. Bake uncovered for 30 minutes or until the cheese has melted and the casserole is cooked through.
*Add more milk as needed.
